The Viral Salad
INGREDIENTS
4 carrots, grated
2 large beets (boiled), grated
2 cans chickpeas, drained
approx. 1/2 pack (about 1 cup) of quinoa, cook according to instructions
1 cucumber, diced
2 small red onions, sliced thinly
2 Tbsp chopped basil (or mint and parsley)
approx. 1 dl crushed pistachios
1 block of firm tofu, crumbled
IN ADDITION
Juice of 1 lemon
a drizzle of olive oil
black pepper
a little salt
PREPARATION
Just mix all the ingredients!
Note: The small lemon slices in the picture are slices of a snack lemon, which I found in the store. It brought a nice flavor to the salad but is not necessary for the recipe of course
