Blueberry & Coconut Breakfast Bowl
One of the best things about mornings is indulging in a visually beautiful breakfast that will just make you happy throughout the day. Today, I made this blueberry "whipped porridge" (a Scandinavian style porridge) topped with some homemade coconut yogurt and blueberry-ginger chia jam.
The recipe for this "blueberry whip" has been my all-time favourite for years already! It’s so simple and quick to make, contains tons of antioxidants and of course, it tastes amazing,
Blueberry "whip"
Serves: 4 portions
INGREDIENTS
1 dl (1/3 cup + 1 Tbsp) chia seeds
2 d (1/2 + 1/3 cup) water
1 dl (1/3 cup + 1 Tbsp) coconut milk or cream
3 small or 2 large frozen and chopped bananas
2.5 dl (1 cup) frozen blueberries
a pinch of cardamom (optional)
TOPPINGS
A splash of coconut milk or cream
Fresh berries
Hulled hemp seeds
INSTRUCTIONS
Measure chia seeds and liquids into the blender jug and let them swell for a moment (maximum 10 minutes).
Add the remaining ingredients and blend on high speed until everything is well mixed and the mixture is fluffy.
Garnish as desired and serve with almond milk.
